Scrumptious Brownies

I am normally not much of a brownie eater but our oldest found a super cute kids Dairy Free Cookbook at the library which contained a brownie recipe.  She REALLY wanted to try to make them but we didn't have all of the ingredients on hand.  So I went to one of my favorite recipe sites (allrecipes.com) and found this Fudgy Brownies I recipe.  I like this site because you can scroll through and check out ratings and reviews.  Once this blog is posted I am going to go give it a big ole 5 star glowing review!  I have been steered wrong a few times by Pinterest so if I am in a rush this is my go to site! 



One of the key words for me is Fudgy....... YUM!  I don't enjoy overly cakey, dry, or crunchy brownies.  I also don't like them too fudgy because then it's just fudge and not a brownie..... maybe you are starting to see why I don't eat them often, I'm a bit picky ;o) If you are making these dairy free remember to check your chips!

These brownies tick off all my wants in a good brownie: crispy top, thick, & fudgy!

INGREDIENTS:
3/4 cup cocoa powder
1/2 tsp baking soda
1/3 cup veg oil
1/2 cup boiling water
2 cups sugar
2 eggs
1/3 cup veg oil
1/2 cup chocolate chips
1 1/3 cup AP Flour
1 tsp vanilla extract
1/4 tsp salt

Preheat oven to 350 degrees and prepare 9x9 pan. 


 In a large bowl mix together cocoa powder, baking soda, and 1/3 cup oil
 Then add the boiling water until the well mixed and becomes thick.
 Here's how it will look
 Then add sugar, eggs, 1/3 cup oil, salt, and vanilla.  Don't be afraid to mix it well!
 Add flour and mix only until flour is incorporated.  This is the stage if you mix too much you will have brownie bricks =) 
 Oh dear..... there's only 1 utensil and 3 kids..... I guess that means mom will hide in the kitchen ;o)
 Now it's time to pour your batter into your prepared pan.  You can grease and flour if you'd like but I am a huge fan of parchment paper.  However, a word to the wise....... don't buy cheap BLEEP parchment paper!  I thought I was saving a buck and a skimped..... big mistake.  The BLEEPING stuff won't tear properly and everything BLEEPING sticks to it which is the opposite of what good parchment paper does!  So do yourselves a favor and don't buy the cheap BLEEP parchment because it will make you want to say a LOT of BLEEP words!!!!

Oh and with a 9x9 pan they will need 50-60 minutes to bake.  Keep checking until toothpick or cake tester comes out dry. 
 Okay..... I am better now.  I think.  ;o)  Here is what they look like right out of the oven!  SO hard not to just scoop out the corner!!
 I am not the best brownie cutter around apparently..... that made me BLEEP again when the edge wanted to buckle..... but oh well!  They taste GREAT!!  and that's really the whole point, right?
